Mexican-Style Grilled Corn
serves 4
Ingredients
- 4 ears corn
- 4 t olive oil
- 1/4 t cayenne pepper
- 3/4 C Cotijo, Parmesan, or Romano cheese
- 1/4 C mayonnaise or plain yogurt
- 3 T sour cream
- 3 T cilantro, chopped
- 4 t lime juice
- 1 cl garlic, minced
- 3/4 t chili powder
- Option: off-the-cob
Instructions
- Coat the corn with oil, salt and cayenne pepper, then grill or broil.
- Mix the remaining ingredients. Season to taste.
- Dredge the corn through the seasoning mix, plate and serve hot.
